Beet and Carrot Slaw

The slaw will go over salad greens. Finished with a diced apple, sprouts and sunflower seeds.

TOOLS:
Food Processor (Lots of shredding involved for the slaw)

COLE SLAW INGREDIENTS:
– 6 Carrots
– 6 Small Trimmed Beets (not peeled)
– Ginger root (about an inch or two), grated
– 3 Limes
– 3 Tablespoons of Low Sodium Soy Sauce

GREEN SALAD INGREDIENTS:
– Spinach and/or Salad Greens
– 1 Diced Apple
– Raw Sunflower Seeds
– Brocolli Sprouts (or any sort of sprouts)

INSTRUCTIONS:
– Juice the limes.
– Grate the beets and carrots on high in the food processor.
– Peel, then Grate the Ginger in the food processor.
– Put the beets, carrots and ginger in a mixing bowl.
– Add the Soy Sauce and stir into slaw.
– Let marinade for a few hours

PREPARING TO SERVE:
– Put Salad Greens on a Plate
– Top the Salad Greens with the Slaw
– Add a Diced Apple
– Add Sprouts
– Add Sunflower Seeds
– Add some of the Juice from the Slaw
– Serve, no need to mix together.
